  • 4 cups corn kernels (fresh or frozen)
  • 4 ounces diced green chiles (canned is fine!)
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch (or 2 tablespoons flour)
  • 4 ounces cream cheese, cubed (softened at room temperature)

Instructions
 

  • In your saucepan over medium heat, combine the corn, green chiles, heavy cream, butter, salt, and pepper.
  • In a small bowl, whisk together the cornstarch (or flour) with a little bit of milk to make a slurry.
  • Pour the slurry into the corn mixture and stir well. Bring everything to a simmer and cook for about 15 minutes, or until the sauce thickens.
  • Reduce heat to low and add the cubed cream cheese. Stir until the cheese is melted and smooth.
