One of the best ways to enjoy it is pan-fried with a simple lemon butter sauce. It’s light, fresh, and just the right balance of buttery richness and citrusy tang.
The first time I made this dish, I was looking for something quick and easy but still full of flavor. I had a couple of cod fillets in the fridge and a lemon sitting on the counter, so I decided to experiment. With just a few pantry staples—butter, garlic, and a little flour for crispiness—I created a dish that tasted like something straight from a fancy seafood restaurant.
Now, this pan-fried cod with lemon butter sauce is one of my go-to meals when I want something light yet satisfying. It pairs beautifully with roasted vegetables, rice, or a simple salad, and the best part? It’s ready in under 20 minutes.

Ingredients
  

  • 2 cod fillets (about 6 oz each)
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • ½ cup chicken or fish broth
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • Pat the cod fillets dry with a paper towel.
  • In a shallow bowl, mix flour, salt, pepper, and paprika.
  • Lightly coat each cod fillet in the flour mixture, shaking off any excess.
  • Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
  • Add the cod fillets and cook for 3-4 minutes per side, until golden brown and flaky.
  • Remove from the pan and set aside.
  • In the same skillet, melt 2 tablespoons butter over medium heat.
  • Add garlic and cook for 30 seconds until fragrant.
  • Pour in chicken broth, lemon juice, and lemon zest.
  • Simmer for 2-3 minutes until slightly reduced.
  • Stir in parsley and remove from heat.
  • Place the cod fillets back in the pan and spoon the sauce over the top.
  • Serve immediately with your favorite side dishes.
