Ingredients
  

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions
 

  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat if needed.
  • Add diced onions and minced garlic to the pot, cooking until softened.
  • Stir in crushed tomatoes, beef broth, dried oregano, dried basil, salt, and pepper. Bring to a simmer.
  • Add broken lasagna noodles to the pot, stirring occasionally to prevent sticking.
  • Simmer the soup for about 10-12 minutes or until the noodles are tender.
  • Taste and adjust seasoning if needed.
  • Ladle the hot soup into bowls and top each serving with shredded mozzarella cheese.
  • Garnish with fresh basil leaves and serve immediately.
