- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 8 ounces lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat if needed.
Add diced onions and minced garlic to the pot, cooking until softened.
Stir in crushed tomatoes, beef broth, dried oregano, dried basil, salt, and pepper. Bring to a simmer.
Add broken lasagna noodles to the pot, stirring occasionally to prevent sticking.
Simmer the soup for about 10-12 minutes or until the noodles are tender.
Taste and adjust seasoning if needed.
