Total Time 35 minutes mins
- 2 refrigerated pie crusts
- 1 cup chocolate chips
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 egg (for egg wash)
- Powdered sugar for dusting (optional)
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Roll out the pie crusts and cut them into rectangles of equal size.
In a bowl, mix together softened butter, brown sugar, granulated sugar, and vanilla until creamy.
Add flour and salt to the butter mixture, combining until it forms a cookie dough consistency.
Spread a layer of cookie dough on half of the rectangles, leaving a small border around the edges.
Sprinkle chocolate chips over the cookie dough layer.
Place the remaining rectangles on top, sealing the edges with a fork.
Beat the egg and brush it over the tops of the pop tarts for a golden finish.
Bake for 12-15 minutes or until the pop tarts are golden brown.
