Ingredients
  

  • 1 ¾ pounds ground beef (preferably 80/20)
  • 1 medium onion, chopped
  • 1 stalk celery, thinly chopped (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • ¼ teaspoon ground cloves (optional)
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup bread crumbs
  • ⅓ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup milk
  • ½ cup tomato sauce (or ketchup)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, onion, celery (if using), spices, bread crumbs, and cheese.
  • In a separate bowl, whisk together the eggs and milk.
  • Add the wet ingredients to the meat mixture and mix gently with your hands until just combined. Don't overmix!
  • Shape the meat mixture into a loaf and place it in the prepared loaf pan.
  • In a skillet over medium heat, warm up the tomato sauce (or ketchup). Pour this over the top of the meatloaf.
  • Bake for 1 hour, or until the internal temperature of the meatloaf reaches 160°F (71°C).
  • Let the meatloaf rest for at least 15 minutes before slicing and serving.
