- 1 pound ground beef
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 cup milk
- 1 cup corn kernels
- 1/2 cup shredded cheese (Cheddar or Mexican blend)
- 2 jalapenos, seeded and finely chopped
- 1/4 cup diced onion
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 2 eggs
- Cooking spray for the muffin tin
Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray.
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat and set aside.
