- 4 boneless, skinless chicken breasts
- 2 large mangoes, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 jalapeño, seeded and minced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
In a mixing bowl, combine the diced mangoes, red and green bell peppers, red onion, cilantro, lime juice, jalapeño, and garlic. Mix well and set aside.
Season the chicken breasts with cumin, paprika, salt, and pepper on both sides.
Place the seasoned chicken breasts in the bottom of the Crock-Pot. Pour the mango salsa mixture over the chicken, ensuring it's evenly distributed.
Cover the Crock-Pot and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be tender and fully cooked through.
