Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 large mangoes, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 jalapeño, seeded and minced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions
 

  • In a mixing bowl, combine the diced mangoes, red and green bell peppers, red onion, cilantro, lime juice, jalapeño, and garlic. Mix well and set aside.
  • Season the chicken breasts with cumin, paprika, salt, and pepper on both sides.
  • Place the seasoned chicken breasts in the bottom of the Crock-Pot. Pour the mango salsa mixture over the chicken, ensuring it's evenly distributed.
  • Cover the Crock-Pot and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be tender and fully cooked through.
  • Once cooked, carefully remove the chicken from the Crock-Pot and place it on a serving platter. Spoon the mango salsa from the Crock-Pot over the chicken. Garnish with additional cilantro if desired.
