Total Time 50 minutes mins
- 2 cups cooked chicken, shredded or cubed
- 2 cups fresh broccoli florets
- 2 cups fresh cauliflower florets
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
Preheat your oven to 175°C (350°F).
In a large pot, bring water to a boil and blanch the broccoli and cauliflower florets for 3-4 minutes until they are bright and slightly tender. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 2 minutes to form a roux.
Gradually whisk in the milk, ensuring there are no lumps. Cook until the mixture thickens, about 5 minutes.
Stir in the shredded cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Continue to stir until the cheese is fully melted and the sauce is smooth.
In a large mixing bowl, combine the cooked chicken, blanched broccoli, and cauliflower. Pour the cheese sauce over the mixture and stir until everything is evenly coated.
Transfer the mixture to a 9x13-inch baking dish, spreading it out evenly.
Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is slightly golden.
Remove from the oven and let it cool for a few minutes before serving.
