Ingredients
  

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 2 cups crushed tortilla chips
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: salsa, sour cream, diced onions, jalapeños, guacamole

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a large skillet, cook ground beef or turkey over medium heat until browned. Drain excess fat.
  • Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir to combine and simmer for 5 minutes.
  • Layer half of the crushed tortilla chips in the bottom of the baking dish.
  • Spoon half of the meat mixture over the chips, then sprinkle with half of the shredded cheese.
  • Repeat the layers with the remaining chips, meat mixture, and cheese.
  • Cover the dish with foil and bake for 20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool slightly before serving.
  • Garnish with your favorite taco toppings and enjoy!
