Ingredients
  

  • 2 ripe avocados
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon capers
  • 2 tablespoons nutritional yeast
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions
 

  • Cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor.
  • Add the lemon juice, Dijon mustard, minced garlic, capers, and nutritional yeast to the blender.
  • Blend on low speed while slowly drizzling in the olive oil until the mixture is smooth and creamy. If the dressing is too thick, add a tablespoon of water at a time until you reach the desired consistency.
  • Taste and season with salt and pepper as needed. Blend again to mix the seasonings evenly.
  • Transfer the dressing to a jar or airtight container and refrigerate for at least 30 minutes to let the flavors meld together.
