Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable or chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups fresh arugula
  • 1 package (9 ounces) cheese tortellini
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions
 

  • Dice the onion, mince the garlic, and set aside.
  • In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened about 5 minutes. Add the minced garlic and cook for another 1-2 minutes.
  • Pour in the vegetable or chicken broth and the can of diced tomatoes. Bring the mixture to a boil.
  • Add the tortellini to the pot and cook according to the package instructions, usually about 7-9 minutes.
  • Stir in the fresh arugula and cook until wilted about 2 minutes.
  • Season the soup with salt and pepper to taste. Ladle the soup into bowls and top with grated Parmesan cheese. Enjoy!
