- 1 tablespoon olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups fresh arugula
- 1 package (9 ounces) cheese tortellini
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Dice the onion, mince the garlic, and set aside.
In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened about 5 minutes. Add the minced garlic and cook for another 1-2 minutes.
Pour in the vegetable or chicken broth and the can of diced tomatoes. Bring the mixture to a boil.
Add the tortellini to the pot and cook according to the package instructions, usually about 7-9 minutes.
Stir in the fresh arugula and cook until wilted about 2 minutes.
Season the soup with salt and pepper to taste. Ladle the soup into bowls and top with grated Parmesan cheese. Enjoy!
