Ingredients
  

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C). Cut the zucchini in half lengthwise and scoop out the center, leaving about 1/4 inch of zucchini flesh. Place the zucchini halves on a baking sheet or dish.
  • In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened about 3-4 minutes. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  • Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes until the mixture is well combined and heated through.
  • Spoon the beef mixture into the hollowed-out zucchinis, pressing it down slightly to fill each one evenly.
  • Sprinkle the shredded mozzarella cheese over the top of each zucchini boat. Bake in the preheated oven for 25-30 minutes, until the zucchinis are tender and the cheese is melted and golden.
  • Garnish with fresh parsley if desired, and serve hot.
