- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 jalapeno pepper, seeded and diced
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (4 ounces) diced green chilies
- 1 can (15 ounces) white beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 2 cups cooked chicken, shredded
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/4 cup fresh cilantro, chopped
- Optional toppings: shredded cheese, sour cream, avocado, lime wedges
In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and jalapeno pepper, and cook for 5 minutes, or until softened.
Add the cumin, oregano, chili powder, salt, and black pepper, and cook for 1 minute, or until fragrant.
Stir in the diced green chilies, white beans, and chicken broth. Bring to a simmer.
Add the shredded chicken and corn, and simmer for 10 minutes.
Stir in the fresh cilantro, and remove from heat.
