Ingredients
  

  • 1 lb beef sirloin, thinly sliced
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tbsp fresh herbs (such as parsley or dill), chopped
  • Salt and pepper, to taste
  • For the dressing: 1/4 cup olive oil, 2 tbsp red wine vinegar, 1 tsp Dijon mustard, 1 clove garlic, minced, salt and pepper to taste

Instructions
 

  • Cook orzo pasta according to package instructions. Drain and set aside to cool.
  • Preheat grill or stovetop grill pan over medium-high heat. Season beef sirloin with salt and pepper. Grill for 3-4 minutes per side, or until cooked to your liking. Remove from heat and let rest for a few minutes before slicing into thin strips.
  • In a large mixing bowl, combine cooked orzo pasta, grilled beef, cherry tomatoes, cucumber, red onion, feta cheese, and fresh herbs.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss to combine. Season with additional salt and pepper, if needed.
  • Serve the Orzo Beef Salad immediately, or refrigerate for later. Enjoy!
