- 2 tablespoons olive oil
- 3 leeks, white and light green parts only, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 6 cups chicken or vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Heat the olive oil in a large pot over medium heat. Add the leeks, onion, and garlic and cook until softened, about 5 minutes.
