- 2 cups water
- 1 tablespoon olive oil or butter
- 1/2 teaspoon salt
- Juice of 1 lime
- Zest of 1 lime
- 1/3 cup fresh cilantro, finely chopped
In a medium saucepan, bring water to a boil. Add rice, olive oil or butter, and salt. Stir briefly.
Lower the heat to a simmer, cover, and cook for 15-18 minutes or until the water is absorbed and the rice is tender.
While the rice is cooking, zest the lime and squeeze the juice into a small bowl. Chop the cilantro finely.
