Ingredients
  

  • 1 cup white rice (jasmine or basmati preferred)
  • 2 cups water
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon salt
  • Juice of 1 lime
  • Zest of 1 lime
  • 1/3 cup fresh cilantro, finely chopped

Instructions
 

  • In a medium saucepan, bring water to a boil. Add rice, olive oil or butter, and salt. Stir briefly.
  • Lower the heat to a simmer, cover, and cook for 15-18 minutes or until the water is absorbed and the rice is tender.
  • While the rice is cooking, zest the lime and squeeze the juice into a small bowl. Chop the cilantro finely.
  • Once the rice is cooked, fluff it with a fork. Stir in the lime juice, lime zest, and chopped cilantro. Mix well to distribute the flavors evenly.
  • Transfer the rice to a serving bowl and enjoy!
