Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 2 ripe bananas (mashed)
  • 1 cup milk
  • 1 large egg
  • 3 tbsp unsalted butter (melted)
  • 1 tsp vanilla extract
  • Optional toppings: Maple syrup, sliced bananas, nuts, or chocolate chips

Instructions
 

  • In a large mixing bowl, combine the flour, baking powder, salt, and sugar.
  • In another bowl, mash the bananas until smooth. Add the milk, egg, melted butter, and vanilla extract. Whisk until combined.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; the batter should be slightly lumpy.
  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancake and cook for another 1-2 minutes until golden brown.
  • Transfer the pancakes to a plate and keep warm. Repeat with the remaining batter.
  • Serve warm with your favorite toppings.
