Total Time 27 minutes mins
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chopped strawberries (or 1/3 cup freeze-dried strawberries)
- 3/4 cup white chocolate chips
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the chopped strawberries (or freeze-dried strawberries) and white chocolate chips. Be careful not to overmix.
Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, leaving about 2 inches between each cookie.
Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly undercooked but will set as they cool.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack. Serve warm or at room temperature.
