Ingredients
  

  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 box red velvet cake mix (15.25 oz)
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, beat the cream cheese and butter together until smooth and creamy.
  • Add the egg and vanilla extract, and mix until well combined.
  • Gradually add the red velvet cake mix and beat until a soft dough forms.
  • Cover the dough with plastic wrap and refrigerate for 30 minutes. This makes it easier to handle.
  • Scoop tablespoon-sized portions of dough and roll them into balls.
  • Roll each ball in powdered sugar until fully coated.
  • Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
