- 8 large eggs
- 1/2 lb ground breakfast sausage
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced bell peppers (optional)
- 1/4 cup chopped spinach or onions (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
Preheat your oven to 375°F (190°C).
Lightly grease a muffin tin or line it with muffin liners.
In a skillet over medium heat, cook the sausage until browned and fully cooked. Drain any excess grease and set aside.
In a mixing bowl, whisk together the eggs, salt, pepper, and garlic powder.
Stir in the cooked sausage, shredded cheese, and optional veggies.
Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 18-20 minutes, or until the egg muffins are set and slightly golden on top.
