- 3 cups cooked, shredded chicken
- 1 box (6 oz) stuffing mix (like Stove Top)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream or milk
- 1 cup chicken broth (to prepare stuffing)
- 1/2 cup shredded cheddar cheese (optional)
- 1/2 cup frozen peas, corn, or green beans (optional)
- Salt and pepper, to taste
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the stuffing mix with 1 cup of hot chicken broth. Stir and set aside to let it absorb the liquid.
In a separate mixing bowl, combine cream of chicken soup, sour cream (or milk), salt, and pepper. Stir well.
In a greased 9x13 baking dish, spread the shredded chicken evenly on the bottom. If using vegetables, layer them on top of the chicken. Pour the creamy sauce over the chicken and spread it out evenly.
Spread the prepared stuffing over the top of the casserole. If using, sprinkle shredded cheddar cheese on top.
Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes, or until the top is golden and crispy.
Let the casserole rest for 5 minutes before serving. Garnish with chopped fresh parsley, if desired.
