- 1 pound (450g) pound cake or sponge cake, cut into cubes
- 2 cups fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 package (3.4 ounces) instant vanilla pudding mix
- 2 cups cold milk
- 2 cups whipped cream or whipped topping
- 1/4 cup sugar (optional, for sweetening berries)
- Fresh mint leaves for garnish (optional)
In a mixing bowl, whisk together the instant vanilla pudding mix and cold milk until thickened. Fold in the whipped cream or whipped topping until well combined.
If desired, toss the sliced strawberries with 1/4 cup sugar to sweeten them.
In the bottom of the trifle bowl or individual glasses, place a layer of cake cubes.
Add a layer of the pudding mixture on top of the cake.
Add a layer of mixed berries (strawberries, blueberries, and raspberries).
Repeat the layers until the bowl is filled, ending with a layer of berries on top.
Refrigerate the trifle for at least 2 hours before serving to allow the flavors to meld. Garnish with fresh mint leaves if desired.
