Total Time 35 minutes mins
- 1 lb (450g) ground beef
- 1 packet taco seasoning or 2 tablespoons chili powder
- 1 small onion, diced
- 1 can (15 oz) chili beans or pinto beans, drained
- 1 can (8 oz) tomato sauce or salsa
- 1 cup frozen corn kernels (optional)
- 3 cups Fritos corn chips
- 2 cups shredded cheddar cheese
- 1/2 cup sliced jalapeños or green chilies (optional)
- Sour cream and green onions for garnish
Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
Stir in the taco seasoning or chili powder, diced onion, and beans. Add the tomato sauce (or salsa) and corn if using. Let it simmer for 5 minutes to combine the flavors.
In a 9x13-inch baking dish, spread half of the corn chips in an even layer. Spoon the beef mixture over the chips, then top with the remaining corn chips.
Sprinkle the shredded cheddar cheese on top of the casserole. Add sliced jalapeños or green chilies for extra flavor if desired.
Place the dish in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
Remove the casserole from the oven and let it cool for a few minutes. Top with sour cream and chopped green onions. Serve and enjoy!
