- 1 cup plain Greek yogurt
- 1 clove garlic, minced
- 2 tablespoons butter or olive oil
- 1/2 teaspoon paprika or chili flakes
- Salt, to taste
- Fresh dill or parsley, for garnish
- Crusty bread, for serving
In a mixing bowl, combine the Greek yogurt with minced garlic and a pinch of salt. Whisk until smooth and creamy. Set aside.
Fill a saucepan with water and bring it to a gentle simmer. Crack each egg into a small bowl, then carefully slide the eggs into the water. Poach for about 3 minutes, or until the whites are set but the yolks are still runny. Use a slotted spoon to remove the eggs and drain on a paper towel.
In a small skillet, melt the butter over medium heat. Once it starts to bubble, add the paprika or chili flakes and stir for about 1 minute, until the butter turns a deep red color. Remove from heat.
