Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 24 ladyfinger cookies
  • 2 tablespoons cocoa powder

Instructions
 

  • Prepare the Crust: Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of the springform pan.
  • Make the Filling: In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well. Stir in vanilla extract.
  • Layer with Ladyfingers: Dip ladyfingers into brewed coffee and arrange over the crust.
  • Add Cream Cheese Mixture: Pour half of the cream cheese mixture over the ladyfingers. Repeat the ladyfinger and cream cheese layers.
  • Chill and Set: Refrigerate for at least 4 hours or overnight to let the flavors meld.
  • Dust with Cocoa: Before serving, dust the top with cocoa powder for that perfect finish.
