- 12 oz spaghetti or your favorite pasta
- 1 lb Italian sausage (mild or spicy, casings removed)
- 3 cloves garlic, minced
- 3 large eggs
- 1 cup grated Parmesan cheese
- 1/2 cup pasta water (reserved from cooking the pasta)
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
In a large skillet, cook the Italian sausage over medium heat, breaking it into small pieces with a wooden spoon, until browned and cooked through. Add the minced garlic and cook for another minute.
In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined.
Add the cooked pasta to the skillet with the sausage. Remove the skillet from the heat.
Slowly pour the egg and cheese mixture over the pasta, tossing quickly to coat the pasta evenly. The residual heat will cook the eggs and create a creamy sauce. Add a little pasta water as needed to loosen the sauce.
Season with salt and pepper to taste. Garnish with chopped parsley if desired, and serve immediately.
