Ingredients
  

  • 4 large flour tortillas
  • 1/2 lb ground breakfast sausage
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced onions (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter or oil

Instructions
 

  • Heat a skillet over medium heat. Add the sausage and cook until browned and fully cooked, breaking it into crumbles. Remove from the skillet and set aside.
  • In the same skillet, sauté the diced bell peppers and onions until softened. Remove and set aside.
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  • Heat butter or oil in the skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until scrambled and just set.
  • Lay a tortilla flat and add a portion of scrambled eggs, cooked sausage, sautéed veggies (if using), and shredded cheese.
  • Roll the tortilla tightly, folding in the sides to secure the filling.
  • Optional: Heat the rolled burritos in a clean skillet over medium heat for 1-2 minutes on each side to lightly crisp the tortilla and melt the cheese.
  • Serve the burritos warm with your favorite toppings or sides.
