- 4 large flour tortillas
- 1/2 lb ground breakfast sausage
- 6 large eggs
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup diced bell peppers (optional)
- 1/4 cup diced onions (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp butter or oil
Heat a skillet over medium heat. Add the sausage and cook until browned and fully cooked, breaking it into crumbles. Remove from the skillet and set aside.
In the same skillet, sauté the diced bell peppers and onions until softened. Remove and set aside.
In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
Heat butter or oil in the skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until scrambled and just set.
Lay a tortilla flat and add a portion of scrambled eggs, cooked sausage, sautéed veggies (if using), and shredded cheese.
Roll the tortilla tightly, folding in the sides to secure the filling.
Optional: Heat the rolled burritos in a clean skillet over medium heat for 1-2 minutes on each side to lightly crisp the tortilla and melt the cheese.
Serve the burritos warm with your favorite toppings or sides.
