Total Time 25 minutes mins
- 1 1/2 cups all-purpose flour
- 2 tbsp cocoa powder
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk
- 1 large egg
- 2 tbsp unsalted butter (melted)
- 1 tsp vanilla extract
- 1-2 tsp red food coloring
- Optional toppings: Cream cheese glaze, whipped cream, fresh fruit, or syrup
In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, egg, melted butter, vanilla extract, and red food coloring until well combined.
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; the batter should be slightly lumpy.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancake and cook for another 1-2 minutes until both sides are golden.
Stack the pancakes on a plate and top with your favorite toppings, like cream cheese glaze or whipped cream. Serve warm.
