Total Time 1 hour hr 20 minutes mins
- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger (optional)
- 2 large eggs
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 1/4 cup milk
- 1 tsp vanilla extract
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, nutmeg, cloves, and ginger (if using).
In a separate bowl, whisk together the eggs, pumpkin puree, vegetable oil, milk, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Be careful not to overmix, as this can make the bread dense.
Pour the batter into the prepared loaf pan and smooth the top with the spatula.
Bake the loaf in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer it to a cooling rack to cool completely. Slice and serve.
