Start by preheating your oven to 175°C (350°F). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg, pumpkin puree, and vanilla extract, and mix until well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and spices (cinnamon, nutmeg, ginger, cloves).
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If you’re adding chocolate chips or nuts, fold them in at this stage.
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.
