- 1 lb Italian sausage (mild or spicy, casings removed)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, sliced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 package (9 oz) refrigerated cheese tortellini
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese (optional, for serving)
In a large pot, cook the Italian sausage over medium heat, breaking it into small pieces with a wooden spoon. Cook until browned and no longer pink.
Add the diced onion, garlic, and carrots to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables soften.
Pour in the chicken broth and diced tomatoes (with their juice). Stir in the basil, oregano, salt, and pepper. Bring to a boil.
Reduce the heat to a simmer and add the tortellini. Cook for about 7-8 minutes, or until the tortellini is tender.
Stir in the fresh spinach and cook for another 2-3 minutes, until the spinach wilts.
Taste and adjust seasoning if needed. Serve hot, topped with grated Parmesan cheese if desired.
