Ingredients
  

  • 4 cups Dashi (Japanese sea stock)
  • 1/2 cup Miso Paste (white or red)
  • 1 cup Tofu, cubed
  • 2 cups Wakame Seaweed, soaked and chopped
  • 3 Green Onions, finely sliced
  • 1 cup Shiitake Mushrooms, sliced
  • 1 cup Bonito Flakes
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Mirin
  • 1 teaspoon Sesame Oil

Instructions
 

  • In a large pot, combine Bonito Flakes and water.
  • Simmer over low heat for 10 minutes, then strain to obtain Dashi.
  • In a separate bowl, dissolve Miso Paste in a small amount of Dashi.
  • Add the miso mixture back to the pot with the remaining Dashi.
  • Introduce Soy Sauce and Mirin to the pot.
  • Stir in Sesame Oil for an extra layer of flavor.
  • Add Tofu, Wakame Seaweed, Shiitake Mushrooms, and Green Onions.
  • Simmer gently until all ingredients are tender.
  • Ladle the steaming miso soup into bowls.
