Easy Ground Beef Fajitas Recipe

I’ve always loved cabbage rolls, but I’ll be the first to admit that they can be a bit time-consuming to make. One day, while I was craving the flavors of cabbage rolls but didn’t have the time to prepare them, I thought, “Why not make a soup version?” I threw together the ingredients I normally use for cabbage rolls and came up with this easy cabbage roll soup. It’s comforting, flavorful, and so much simpler to make, but still gives you that hearty, satisfying taste that cabbage rolls are known for.
Since then, it’s become one of my favorite go-to recipes. It’s perfect for busy nights, and it’s a great way to use up leftover cabbage or ground meat. The soup is filling and can be made ahead, which makes it even more convenient. Every time I make it, my family is happy to gather around the table and enjoy a big bowl of it together.

Equipment

  • Large skillet
  • Knife and cutting board
  • Spoon for stirring
  • Measuring Spoons
  • Tongs (for flipping tortillas if heating on a pan)

Ingredients
  

  • 1 pound ground beef (85% lean)
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 tablespoons fajita seasoning (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: sour cream, cheese, guacamole, salsa

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the ground beef and cook, breaking it up as it browns, for about 5–7 minutes.
  • Drain any excess fat if necessary and season the beef with fajita seasoning, salt, and pepper.
  • Add the sliced onions and bell peppers to the skillet with the beef.
  • Stir to combine and cook for another 5–7 minutes until the vegetables are soft and slightly caramelized.
  • Drizzle lime juice over the beef and veggie mixture and stir to coat everything evenly.
  • While the beef and veggies cook, warm the tortillas in a dry skillet for 30 seconds on each side or wrap them in a damp paper towel and microwave for 20–30 seconds.
  • Serve the beef and vegetable mixture in warm tortillas and add your favorite toppings like cheese, sour cream, guacamole, or salsa.
