- 1 lb boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp paprika
- 1 tsp onion powder
- Juice of 1 lemon
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
- Salt and pepper to taste
- 4-6 pita breads
- Sliced tomatoes
- Sliced cucumbers
- Sliced red onions
- Fresh parsley or lettuce (optional)
In a bowl, combine the olive oil, garlic, oregano, paprika, onion powder, lemon juice, salt, and pepper. Add the chicken and toss to coat. Let it marinate for at least 30 minutes (or overnight for more flavor).
While the chicken marinates, make the tzatziki sauce. In a bowl, mix the Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper. Cover and refrigerate until ready to use.
Heat a skillet or grill pan over medium-high heat. Cook the chicken for 5-7 minutes per side, or until fully cooked (internal temperature of 165°F). Let it rest for 5 minutes, then slice into strips.
Warm the pita bread in the skillet or microwave for a few seconds.
Assemble the gyros: Spread tzatziki sauce on the pita, then add the sliced chicken, tomatoes, cucumbers, red onions, and parsley or lettuce if using.
Fold the pita and serve immediately.
