Ingredients
  

  • 1 (15 oz) can of chili (with or without beans)
  • 8 oz cream cheese (cubed, softened)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (optional for extra creaminess)
  • 1/4 tsp chili powder (optional for added spice)
  • 1/4 tsp garlic powder (optional for flavor)
  • 1/2 cup diced Rotel tomatoes (optional)
  • Optional toppings: Sliced jalapeños, chopped green onions, or diced avocado

Instructions
 

  • Cube the cream cheese and shred the cheddar cheese if not already done.
  • Optional: Drain the Rotel tomatoes to remove excess liquid.
  • In the crockpot, add the chili, cream cheese, shredded cheddar cheese, sour cream (if using), chili powder, and garlic powder.
  • Stir gently to combine.
  • Cover the crockpot with the lid and cook on LOW for 2-3 hours, or HIGH for 1-1.5 hours.
  • Stir the dip every 30 minutes to ensure even melting and prevent sticking.
  • Once the cheese is fully melted and the dip is smooth, taste and adjust the seasoning.
  • Garnish with sliced jalapeños, chopped green onions, or diced avocado if desired.
  • Serve the dip warm directly from the crockpot. Pair it with chips, crackers, or veggies.
