- 2 cups cooked chicken breast, diced
- 4 cups zucchini, sliced
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs
- 1/4 cup melted butter
- Salt and pepper to taste
Preheat your oven to 350°F (175°C).
If not already cooked, dice the chicken breast and cook in a skillet until fully cooked.
Slice the zucchini into rounds.
In a large mixing bowl, combine the diced chicken, sliced zucchini, cream of chicken soup, sour cream, salt, and pepper. Mix well.
Pour the mixture into a greased 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
In a small bowl, combine the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture over the cheese layer.
Bake in the oven for 30-35 minutes, until the top is golden brown and the casserole is bubbly.
