Ingredients
  

  • 2 cups cooked chicken breast, diced
  • 4 cups zucchini, sliced
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 1/4 cup melted butter
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • If not already cooked, dice the chicken breast and cook in a skillet until fully cooked.
  • Slice the zucchini into rounds.
  • In a large mixing bowl, combine the diced chicken, sliced zucchini, cream of chicken soup, sour cream, salt, and pepper. Mix well.
  • Pour the mixture into a greased 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  • In a small bowl, combine the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture over the cheese layer.
  • Bake in the oven for 30-35 minutes, until the top is golden brown and the casserole is bubbly.
  • Let the casserole cool slightly before serving.
