Total Time 35 minutes mins
Large skillet for cooking the chicken and mushrooms
Cutting board and knife for chopping ingredients
Tongs or spatula for flipping chicken
Measuring cups and spoons for accuracy
Wooden spoon for stirring the sauce
- 4 boneless, skinless chicken breasts (about 500g)
- 250g mushrooms (cremini or button, sliced)
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth (240ml)
- ½ cup heavy cream (optional for richness)
- 1 tablespoon olive oil
- 1 tablespoon butter
- Fresh thyme or parsley for garnish
- Salt and pepper to taste
Season the chicken breasts with salt and pepper on both sides.
Heat olive oil and butter in a large skillet over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced mushrooms, onions, and garlic. Sauté for 5-6 minutes until the mushrooms are golden and the onions are softened.
Pour in the chicken broth and stir, scraping any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes, then stir in the cream (if using) and cook until the sauce thickens slightly.
Return the chicken to the skillet and let it simmer in the sauce for 3-4 minutes. Garnish with fresh thyme or parsley and serve hot.
