Ingredients
  

  • 3 cups cooked chicken (shredded or diced)
  • 2 cups cooked wild rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup chopped celery
  • 1/2 cup chopped onions
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)

Instructions
 

  • Preheat your oven to 190°C (375°F).
  • In a medium pot, cook the wild rice according to the package instructions. Set aside when done.
  • In a large skillet, sauté the celery, onions, and mushrooms over medium heat until soft, about 5 minutes. Add garlic powder, thyme, salt, and pepper, and stir well.
  • In a large bowl, combine the cooked chicken, wild rice, sautéed vegetables, cream of chicken soup, and chicken broth. Stir everything together until well mixed.
  • Pour the mixture into a greased 9x13 inch casserole dish. If using cheese, sprinkle it on top.
  • Place the casserole in the preheated oven and bake for 25-30 minutes, until the top is golden and bubbly.
  • Let the casserole cool for a few minutes before serving to allow the filling to set.
