- 200g (7 oz) pasta (fettuccine or penne)
- 2 boneless, skinless chicken breasts, sliced thin
- 1 tablespoon Cajun seasoning (plus extra to taste)
- 1 tablespoon olive oil
- 1 bell pepper, sliced thin
- 1/2 onion, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
In a large pot, cook pasta according to package instructions. Drain and set aside.
In a bowl, toss the sliced chicken with Cajun seasoning until evenly coated.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook until browned and cooked through about 5-7 minutes. Remove the chicken and set aside.
In the same skillet, add the bell pepper and onion. Sauté until softened, about 3-4 minutes.
Reduce the heat to low. Pour in the heavy cream and add the Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.
Add the cooked pasta and chicken to the skillet, tossing to coat in the sauce. Add additional Cajun seasoning if desired. Cook for another 1-2 minutes until everything is heated through.
Garnish with chopped parsley if desired, and serve hot.
