Ingredients
  

  • 2 large cucumbers, sliced
  • 1/2 small onion, thinly sliced
  • 1/2 cup vinegar (white, apple cider, or rice vinegar)
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • Fresh dill or parsley (optional, for garnish)

Instructions
 

  • Start by washing the cucumbers and the onion. Peel the cucumbers if the skin is thick or bitter, or leave it on if it’s tender. Slice them into thin rounds and set them aside. Then, peel and thinly slice half of a small onion. Red or white onion both work fine—it depends on how strong you like the flavor. Place the sliced cucumbers and onions in a medium mixing bowl. If you’re using fresh dill or parsley for garnish later, give that a quick rinse and chop it now so it’s ready.
  • In a separate small bowl, whisk together the vinegar, sugar, and salt until the sugar is mostly dissolved. You can use white vinegar for a clean tang, apple cider vinegar for a slightly sweet note, or rice vinegar if you prefer something mild. Pour this dressing over the sliced cucumbers and onions. Gently toss everything together using a spoon or your hands until the cucumbers are evenly coated. Let the salad sit for about 10 to 15 minutes before serving—this helps the cucumbers absorb the flavor. If you like, sprinkle with fresh dill or parsley just before serving for a little extra color and freshness.
