- 12 oz pasta (fettuccine, penne, or your choice)
- 1 lb Italian sausage (mild or spicy, casings removed)
- 1 tbsp olive oil
- 8 oz mushrooms, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream or half-and-half
- 1/2 cup grated Parmesan cheese
- 1 tsp dried thyme
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Cook the pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it into small pieces with a wooden spoon, until browned and cooked through. Remove the sausage and set aside.
In the same skillet, add the mushrooms and onion. Cook for 5-7 minutes, until the mushrooms are golden and the onion is softened. Add the garlic and cook for another minute.
Stir in the heavy cream, Parmesan cheese, thyme, salt, and pepper. Bring to a simmer and let it cook for 5 minutes, stirring occasionally.
Return the cooked sausage to the skillet. Add the cooked pasta and toss everything together until well coated in the sauce.
Cook for another 2-3 minutes to heat through. Taste and adjust seasoning if needed.
