When the weather turns chilly, there’s nothing quite like a bowl of soup to warm you up. This Creamy Parmesan Italian Sausage Soup is one of my favorite recipes to make during the colder months. It’s rich, comforting, and full of flavor. I first tried a version of this soup at a little Italian restaurant years ago, and I’ve been making my own version ever since. The combination of savory Italian sausage, creamy broth, and Parmesan cheese is just irresistible. It’s the kind of soup that feels like a cozy blanket on a cold day. - 1 lb Italian sausage (mild or spicy, casings removed)
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- Optional: red pepper flakes for a little heat
In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it into small pieces with a wooden spoon, until browned and cooked through. Remove the sausage and set aside.
In the same pot, add the diced onion and cook for 4-5 minutes, until softened. Add the garlic and cook for another minute.
Pour in the chicken broth and bring to a simmer. Stir in the cooked sausage, basil, oregano, salt, and pepper. Let it cook for 10 minutes.
Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Cook for another 5 minutes, stirring occasionally, until the cheese is melted and the soup is creamy.
Add the fresh spinach and cook for 2-3 minutes, until the spinach is wilted.
Taste and adjust seasoning if needed. Serve hot, garnished with extra Parmesan cheese if desired.
