- 3 cups cooked, shredded chicken (rotisserie chicken works great)
- 2 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
- 1 block (8 oz) cream cheese, softened
- 1/2 cup heavy cream (or milk)
- 1/2 cup sour cream (or Greek yogurt)
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 garlic cloves, minced (or 1/2 tsp garlic powder)
- 1/2 tsp onion powder
- 1/2 tsp Italian seasoning
- Salt and pepper, to taste
- Optional: 1/2 cup sautéed mushrooms or 1/4 cup sun-dried tomatoes for extra flavor
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine softened cream cheese, heavy cream (or milk), sour cream, garlic, onion powder, Italian seasoning, salt, and pepper. Mix until smooth.
Add shredded chicken, fresh spinach, and half of the mozzarella cheese to the sauce. If you’re adding mushrooms or sun-dried tomatoes, fold them in as well. Mix everything together until well coated.
Pour the mixture into a greased 9x13 baking dish. Spread it out evenly.
Sprinkle the remaining mozzarella and Parmesan cheese on top.
Bake uncovered for 25-30 minutes or until the top is golden and bubbly.
Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley or basil, if desired.
