- 2 tablespoons olive oil
- 2 chicken breasts, cut into strips
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 3 cups mushrooms, sliced
- 3 garlic cloves, minced
- 1 cup chicken broth
- 8 oz egg noodles
- 2 tablespoons parsley, chopped
Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Season the chicken strips with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the butter. Once melted, add the sliced mushrooms and cook until they are tender and browned, about 5 minutes. Add the minced garlic and cook for another minute.
Add the chicken broth to the skillet and bring to a simmer. Return the chicken to the skillet and stir to combine. Add the cooked noodles and toss everything together until well mixed.
Sprinkle the chopped parsley over the top and serve immediately.
