Ingredients
  

  • 2 tablespoons olive oil
  • 2 chicken breasts, cut into strips
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 3 cups mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 8 oz egg noodles
  • 2 tablespoons parsley, chopped

Instructions
 

  • Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Season the chicken strips with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the butter. Once melted, add the sliced mushrooms and cook until they are tender and browned, about 5 minutes. Add the minced garlic and cook for another minute.
  • Add the chicken broth to the skillet and bring to a simmer. Return the chicken to the skillet and stir to combine. Add the cooked noodles and toss everything together until well mixed.
  • Sprinkle the chopped parsley over the top and serve immediately.
