Ingredients
  

  • 300g pasta (penne or fusilli work well)
  • 2 chicken breasts, cut into bite-sized pieces
  • 1 cup pesto sauce
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 7-10 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add a bit more olive oil if needed and sauté the minced garlic until fragrant, about 1-2 minutes.
  • Return the chicken to the skillet, add the cooked pasta, pesto sauce, and sun-dried tomatoes. Toss everything together until well combined and heated through.
  • Sprinkle with grated Parmesan cheese before serving
