- 1 pound carrots, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup orange juice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and pepper, to taste
- Fresh cilantro, for garnish
In a large soup pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic and cook until soft and translucent, about 5 minutes.
