  • Aluminum foil
  • Baking Sheet
  • Food processor or zip-top bag and rolling pin (for crushing graham crackers)

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • Whipped cream
  • Caramel sauce
  • Chopped pecans

Instructions

  • Preheat your oven to 325°F (163°C) and position a rack in the center.
  • In a food processor or using a zip-top bag and rolling pin, crush the graham crackers into fine crumbs.
  • In a mixing bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Mix until the crumbs are evenly coated.
  • Press the mixture into the bottom of the 9-inch springform pan to form the crust.
  • In a large mixing bowl, beat the cream cheese until smooth.
  • Add 1 cup of sugar and continue to beat until well combined.
  • Mix in the eggs, one at a time, and add the vanilla extract.
  • In a separate bowl, combine the pumpkin puree, cinnamon, nutmeg, cloves, and ginger.
  • Gradually add the pumpkin mixture to the cream cheese mixture and mix until everything is well incorporated.
  • Pour the cheesecake filling over the prepared crust.
  • Wrap the bottom of the springform pan with aluminum foil to prevent any water from seeping in during baking.
  • Place the pan on a baking sheet and add about 1 inch of hot water to the sheet.
  • Bake the cheesecake for about 60-70 minutes, or until the edges are set, and the center is slightly jiggly.
  • Turn off the oven, crack the oven door, and let the cheesecake cool for an hour.
  • Remove the cheesecake from the oven and refrigerate it for at least 4 hours or overnight.
  • When you're ready to serve, you can add a dollop of whipped cream, drizzle with caramel sauce, and sprinkle with chopped pecans for that extra touch of indulgence.
