- 6 tbsp. olive oil, divided
- 1 whole ribeye roast (boneless or bone-in), approximately 14 pounds
- 4 tbsp. tri-color peppercorns
- 3 sprigs rosemary
- 3 sprigs thyme
- 1/2 c. kosher salt
- 1/2 c. minced garlic
Preheat your oven to 500°F. Let the roast sit at room temperature for 30 minutes to 1 hour.
Cut the rib loin in half for controlled cooking.
Sear both halves in a hot skillet with 2 tablespoons of oil until golden.
Crush peppercorns, strip leaves from rosemary and thyme, mix with salt and garlic. Pour remaining 4 tablespoons of oil over the rib loin and apply the rub.
