Ingredients
  

  • 1 and 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1/2 cup unsalted butter
  • 1/4 cup cocoa powder
  • 1/4 cup milk
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare your cake pans.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla extract; mix until smooth.
  • Stir in boiling water – the batter will be thin, but that's okay.
  • Pour the batter evenly into the prepared pans.
  • Bake for 30 to 35 minutes or until a toothpick inserted comes out clean.
  • For the icing, melt butter in a saucepan, then whisk in cocoa powder and milk. Remove from heat and stir in powdered sugar and vanilla extract.
  • Once the cakes are cool, ice and stack them, finishing with a generous layer on top.
