- 2 tablespoons olive oil
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- 4 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 4 cups vegetable broth
- 1 cup milk (or coconut milk)
- Salt and pepper to taste
- Fresh parsley or dill, chopped (optional)
Heat olive oil in a large pot over medium heat. Add the onion and cook until softened about 5 minutes.
Add the celery and carrots and cook for an additional 5 minutes, or until slightly softened.
Add the garlic and cook for another minute, until fragrant.
